[RECIPE] Scrumptious Raw Fruit and Nut Granola Bars

Who doesn’t love granola bars – am I right?!  My mom LOVES granola bars, specifically the Kind brand Dark Chocolate Cherry Cashew.  Kind brand features yummy granola bars that are gluten free, lower in sugar than most granola bars, and contain only pronounceable ingredients!  I love them. The only issue is the price – these yummy bars are quite pricey.  When my mom told me that she was buying these weekly, I quickly responded that I could make them for much less.  Luckily for everyone, I was right!  Today I give you my Raw Fruit and Nut Granola Bars!  If Kind bars and Cliff bars had a baby, it would by my Raw Fruit and Nut Granola Bars.

These Raw Fruit and Nut Granola Bars are so easy to make. They require zero cooking or baking!  They are crunchy, chewy, sweet, and savory.  I’m a sucker for a chewy granola bar.  What about you – chewy or crunchy granola bars?

Now, I would have used cashew butter for this recipe, but the co-op was all out.  I was on a time crunch because I was going to visit my mom shortly after, so I subbed in my dear friend peanut butter.  Oh man, you just can’t go wrong with peanut butter. It’s so delicious.  Though, if you are allergic or sensitive to peanuts certainly sub in any other nut or seed butter.

These Raw Fruit and Nut Granola Bars are a healthy, yet decadent treat.  They’re full of protein, making them great as a post-workout snack, meal replacement, or a hold over snack.  Though, I will warn you, once you take a bite of these you’ll never go back to the store bought versions!

Raw Fruit and Nut Granola Bars

Serves: 8 bars


4 Medjool dates, chopped
2 c. Cashew pieces & halves, soaked and dehydrated*
1/4 c. Raisins
1/4 c. Dried Cranberries
1/2 Vanilla bean, scraped*
1 tbsp. Coconut Oil
2 tbsp. Cocoa Powder
1/4 tsp. Cinnamon
3 tbsp. Peanut Butter, or nut butter of choice
1 tbsp. Honey (Vegan Option – use agave)
1/4-1/2 c. Dark Chocolate Chunks

*Cashews do not have to be soaked and dehydrated, but it makes them easier to digest.

*If you don’t have vanilla beans simply substitute 1/4 tsp of sugar-free vanilla extract

Chocolate Drizzle Ingredients

1/4 c. Dark chocolate Chunks
1 tbsp. Coconut Oil


Pulse dates, vanilla, oil, peanut butter, and 1/2 c. of cashews in a food processor until a paste forms.  Add this mixture to a mixing bowl. Add remaining cashews to the bowl of a food processor and pulse to chop, about 10 seconds.  Add cashews to mixing bowl with the date paste.  Add remaining ingredients and mix by hand. Roll 1/4 c. of mixture between your hands and flatten onto a parchment paper lined tray.  Form into a bar by repeatedly flattening the mixture and shaping the sides into a rectangular shape. Place in freezer for 10 mins.  Prep chocolate drizzle by melting dark chocolate chunks either in microwave (about 45 seconds) or in a double boiler.  Add in oil and mix.  Remove bars from the freezer and drizzle chocolate over top with a fork.  Store in freezer or refrigerator to avoid melting.
